The Process Assurance Model. Application in the plant yogur Paraíso

Abstract

Yogurt production has a wide demand in the national market, however, the Paraíso Yogur Plant belonging to LABIOFAM Empresa de Productos Inyectables, has had non-compliance with its production plans since its start-up. The objective of the research was to identify the primary deficiencies of the yogurt production process in the factory through the Process Assurance Model. Techniques such as direct observation, unstructured interviews, and brainstorming, were used. The primary deficiencies found are related to raw materials, assets, and personnel, followed by transport and means of work, and to a lesser extent waste, service, and information. They highlight the delays in the deliveries of raw materials by suppliers, deficiencies in the machinery by the absence of spare parts, and the absence of refrigerated transport for yogurt.
