Improvements to Venegas' quality and safety system for producing sausages
Abstract
Food safety is an essential requirement for organizations in the food industry because it forms the basis of business success. Cuban entities cannot ignore this reality; therefore, an investigation was conducted on sausage production at the Venegas Basic Business Unit of the Pinar del Rio Meat Company with the objective of developing improvements to the food safety system. Using analysis/synthesis and historical/logical methods, and techniques such as document analysis, the Delphi method, brainstorming, checklists, and time series graphs, the degree of implementation of the requirements of the Cuban food safety standard was diagnosed. It was found that the plan, verification procedures, and identification of critical control points were inadequate. Based on this finding, improvements to the system were designed to promote the production of safe, consistent, and high-quality sausages.
